The first page carries your start number, and every page after it counts up by one — a 12-page file starting at 5 ends on page 16, which is what you need when this document continues a printed original, including one assembled from several separate scans. Pick a start value and a position and every page is numbered automatically, including a file that never had numbers before. For a PDF with an unnumbered cover page, take the cover off first with Delete pages, number the rest, and merge the cover back in.
Bottom centre is the default and the common choice for reports and books, so you can add page number marks without changing anything.
