Drop a PDF in and get a .docx you can actually edit — real text, not a picture of text. Opens in Word, Google Docs and LibreOffice.
A PDF made from a document — exported from Word, saved from a browser, produced by an invoicing tool — carries its text inside it, and that converts well: paragraphs stay paragraphs, headings stay headings, lists stay lists, and the wording comes through letter for letter. That is the everyday case, and it is fast: a couple of pages take about a second.
Complex magazine-style layouts are harder. Multi-column pages, text wrapped around images and heavy tables come through as text you can edit, but expect to tidy the layout afterwards rather than getting a pixel-perfect copy. We would rather tell you that here than let the download surprise you.

A scan is a photograph of text, and a photograph contains no letters to convert — running it through this page would give you an empty document, so we stop it at the door instead and tell you.
The fix is on this same site: the OCR tool reads the pictures and writes a real text layer into the PDF. Run your scan through that first, then drop the result here and it converts like any other PDF.
